What are you cooking this week? No stress - check out these easy Autumn recipes

Hi Reader

Cooking with seasonal produce is a great way to eat more sustainably. Did you also know that it's often cheaper? When there's an abundance of something, the price comes down. Also, fruit and vegetables start to lose their nutritional value as soon as they are picked, so eating in season helps get the best nutritional value from your food.

What is in season in Autumn / Fall?

Here's a handy list!

French beans, runner beans, beetroot, broccoli, brussel sprouts, butternut squash, cabbages, carrots, cauliflower, celeriac, celery, chard, chillies, courgettes (zucchini), kale, leeks, lambs lettuce, marrows, onions, pak choi, parsnips, bell peppers, potatoes, pumpkins, rocket, salsify, shallots, spinach, squashes, swede, sweet potato, sweetcorn, tomatoes, turnip.

This week, these are the recipes I'm cooking, using those seasonal vegetables! I've also included a 'pantry recipe'. A pantry recipe is always handy as it avoids the need to go to the shops.

This weeks Pantry Recipe

Bean Goulash

A spicy mixed bean stew, flavoured with paprika. Hearty, filling, and cheap. Serve it with rice or a baked potato.

Eat One, Freeze one

Batch cooking helps save on energy costs. It also means you have a delicious meal in the freezer, meaning you don't need to cook every night or spend money on an emergency takeaway.

Sweet Potato Chilli

Sweet potatoes are roasted with sweet smoked paprika and cumin and are deliciously sweet and spicy all at the same time. Add in onions, peppers, beans and a thick tomato sauce and you have the perfect vegan chilli.

One-Pot Comfort Food

We all love comfort food this time of year and one pot recipes are perfect!

Sausage Casserole

This sausage casserole is hearty, filling, and makes great comfort food. You can make this with pork sausages or vegan sausages and it's just 10 minutes prep time,

This week's Fish Recipe

People are always asking me for fish recipes. Fish is good for us and a great way to reduce meat consumption.

Kedgeree with Smoked Haddock

A traditional Scottish dish with smoked haddock and curried rice. This is a simple version but still tastes delicious.

This week's Snack Recipe

Apple and Pear Loaf Cake

There are so many apples and pears around at the moment, and this loaf cake is a great way to use them up – even the windfall ones!

Until next week!
