🌍What's hiding in your salad drawer?

Hi Reader

For years I used to buy vegetables with good intentions and throw some away at the end of the week. Now I do a quick fridge check before planning meals.

This week's recipes are built around ingredients that often get forgotten.

Meal Plan

Lemon Chicken Tray Bake

An all-in-one family dinner with potatoes, onion, broccoli, and boneless chicken thighs. It's super easy with just 5 minutes of prep time

5 Bean Chilli

A 5 Bean Chilli is an easy family-friendly dish, perfect for meat-free days

Pan Fried Plaice

Perfect for summer and very quick and easy

Smoked Mackerel Salad

Ready in under 10 minutes!

Stuffed Peppers

Serve two or more for a filling main meal with a side salad or use them as a lunch, starter, or as a delicious side dish to chicken or fish

Reduce Food Waste

Create one "eat it up" meal every week using food in your fridge. It doesn't need to be a perfect recipe. Try making a pasta bake with random vegetables or a soup. Add small leftovers to a risotto or an omelette. Leftover fruit can be blitzed into a smoothie or even frozen.

Until next week!

Next week, there will be 6 of us and we need meals we can easily cook over a small two burner camping stove. For the first night, I always take something with us that I've cooked...
