Hi Reader Next week I'm going camping and it's reminded me about the need for simple holiday meals. When I'm on holiday, I want meals I can throw together quickly. I also want meals that are relatively cheap to cook, to balance out the times when we might eat out and help keep that holiday budget under control. Next week, there will be 6 of us and we need meals we can easily cook over a small two burner camping stove. For the first night, I always take something with us that I've cooked earlier in the week and frozen. Usually something that can be served with pasta or rice, such as a chilli or bolognese. These are my top 5 holiday meals! They are all cheap to make and easily adaptable to help you use up leftovers. 1. Veggie pasta sauce. Because it's packed full of vegetables it's a healthy meal full of nutrients for days that may have been dominated by ice cream and cake. 2. Lentil and chickpea curry is not only super cheap to make, it's also made from storecupboard ingredients, so if you don't have time / want to have to go food shopping after a long day, this is perfect. It also works super well for camping as you don't need to store any of the ingredients in a fridge. 3. Tortilla Quiche. Not only is this a leftovers hero, it's good for warm days served with salad. You might want to save this one for just before you leave when you have odds and ends to use up. 4. Chicken and Chorizo risotto. This one is handy because chorizo stores well for a long time. You can use pre-cooked chicken, peppers and whatever other veg you have to hand. If you remember, take just enough tumeric with you in a little bag. 5. Tuna Pasta. Another recipe that's made from storecupboard ingredients and very cheap to make. The recipe has this as a pasta bake, but if you don't want to bake it , you can just serve it without baking and sprinkle some cheese on top if you like.
