🌍stuff I nearly forgot about this week

I just opened the fridge for my weekly check before my 'Friday big shop' and discovered a bag of broad beans I'd completely forgotten about. It happens to all of us, (well not always beans 😜). We buy food with the best intentions and then life gets busy.

One of the easiest ways to waste less food is simply to build meals around what's already in the fridge. That's exactly what inspired this week's meal plan.

Meal Plan

Broad Bean Salad

A simple 10 minute salad with peas, feta and lemon.

Prawn and Pea Risotto

30 minute recipe and you can keep the prawns and peas in the freezer, so it's also a great 'rescue dinner'.

Red Pesto Chicken Casserole

You can make this in advance!

Morrocan Couscous

Serve with halloumi, flatbread, chicken or fish.

​

Grilled Haddock

These take less than 10 minutes to cook.

Freeze any leftover fresh herbs in olive oil before they spoil.
