Hi Reader This week I'm thinking ahead to Easter so I thought I'd share a few ideas with you to help you get the most out of everything you buy, reduce food waste and of course, save money. I've a great recipe for using up any leftover lamb. Although lamb has a higher carbon footprint than pork or chicken, it is often a traditional dish at Easter time and we're not about perfection here. We're in this sustainable journey for the long-term. A lamb tagine works well as it doesn't matter how much roast lamb you have leftover, it still works. I've also included a recipe for how to roast a gammon joint as a good Easter alternative and a carbonara as again it's great for leftovers. If you're feeding a crowd on a budget, my vegetable lasagne is perfect. Serve with a side of garlic bread and some salad to make it go further. Finally, I've been making Banana Oatmeal bars as an alternative to banana muffins this week. My boys both arrived home from university with some rather overripe bananas. These are good for breakfast, or a snack or you can even freeze them for back-to-school. If you're still looking for Easter Eggs, could you choose a Fairtrade one? Climate change, unstable market prices, and rising production costs continue to threaten cocoa-growing communities, but Fairtrade standards ensure farmers receive a fair deal and the tools they need to survive. You can find Fairtrade Easter Eggs in Aldi, Co-op, M&S and Waitrose. Look out for Divine Chocolate, Tony's Chocoloney, Cocoa Loco and The Real Easter Egg.
