Easy Budget Spring Recipes to help with the cost of living.

I'm hearing from people that one of their main concerns is the cost of living crisis. As prices on just about everything creep up, it's becoming more important to find ways to save on food.

The good news is that you can still eat well on a budget and building in some meat free days really helps keeps the cost of the weekly shop down.

This week, I'm making a tuna pasta bake. This is one of my favourite budget meals. Tinned tuna is relatively cheap and you can make this pasta bake go along way.

Cod Mornay is a cheaper version of a fish pie and you can make this with any white fish including things like pollack and hake which are often cheaper than cod.

A Quorn chilli is a great budget way to substitute the meat and quorn can also be cooked from frozen, making this an easy standby.

Pork meatballs in a tomato sauce served with spaghetti is an easy budget meat choice. Not only does pork have a lower carbon footprint than beef or lamb, it's also cheaper.

Finally, a vegetarian bean goulash is super cheap to make. Serve with a jacket potato or rice and use up any leftover dips or toppings from your chilli.

The ultimate budget-friendly pasta bake, made from store-cupbaord ingredients and ready in just over 30 minutes.

Cod Mornay -Budget Fish Pie

Just add the fish to an ovenproof dish, cover with sauce, top with cheese and breadcrumbs and bake!

Quorn Chilli

Swap the meat for quorn. It's high in protein, low in fat, budget-friendly and on the the table in just 30 minutes.

Pork Meatballs with Spaghetti

Super easy to prepare and a great family dinner.

Bean Goulash

A spicy mixed bean stew, flavoured with paprika. Hearty, filling, and cheap to make.
